Prep the pork ribs in portions of 8 oz.
Add salt and white pepper, dip in flour and fry in oil (for 2 min each side).
Remove ribs and place in oven pan.
In same skillet that ribs were fried, sauté the yellow onion, celery, carrots, garlic (till honey color).
Add brandy and flame it.
Deglaze with beef stock.
Add red peppers, pepper, bay leaves and ground clove. Cook for 10 min.
Pour stock and sauce over pork ribs.
Cover with foil.
Cook for 1 hour at 350 degrees.
Separate the ribs from the braised vegetables and juices.
Blend and strain the juices. This makes the sauce.
Drizzle with sauce.
